Winery specialized in organic wines

  • We have limited crop yields, low production of clusters per plant, causing a large concentration of quality compounds for the grape.

  • We carry out a natural treatment to the vineyard and wine, free of pesticides and herbicides

    .
  • The harvest is done manually, in small boxes. The distance to the Winery is minimal, since our vineyards are located at walking distance from the Winery, therefore grapes arrive intact. In addition, we perform another selection of clusters before depositing in tanks.

  • To better preserve the natural aromas of the grape, since they can be damaged by the heat of the day, we carry out the harvest at night.

  • Fermentation in low volume conical tanks (5000L). Giving rise to a better homogenization of the must and better temperature control.

  • The skins are not pressed resulting in lower wine yield, but of better quality and less bitter astringency.

  • We do not use aggressive filtering, or stabilize by cold, decanting is done naturally in the tanks and barrels.

  • We exclusively use natural corks, to better preserve the qualities of the wine.

  • By having a small production, we make very limited and numbered editions of each wine.

THE MOST IMPORTANT THING ...

  • We produce healthier wines; since free from chemical pollutants, the wine polyphenols (compounds responsible for the color and body), are synthesized in greater quantity.

  • In addition, they have low levels of sulfites (compound responsible for the discomfort that some wines produce).

    The acceptable dose for humans ranges between 42-56 mg/day, based on a weight of 60 - 80 kg.; equivalent to the consumption of more than half a bottle of wine containing the maximum allowed. In our case, equivalent to the consumption of more than one bottle. The symptoms of intoxication occur with a dose of 4g/day.
